A Bush Christmas Feast: Creating a Native Australian Christmas Recipe

Christmas is a time of joy, togetherness, and indulgence in delightful flavours that mark the festive season. Incorporating these flavours pays homage to the oldest living cultures on Earth and adds an unmistakably Australian twist to your festive table.

Bush Christmas Pavlova with Wattleseed and Finger Lime

Ingredients:

For the pavlova base:

  • 4 egg whites (room temperature)
  • 1 cup caster sugar
  • 1 teaspoon cornflour
  • 1 teaspoon white vinegar
  • 1 teaspoon wattleseed (adds a nutty, coffee-like flavour)

  • 300ml thickened cream

Method:

  1. Prepare the pavlova base:
    Preheat your oven to 120°C (fan-forced). Line a baking tray with parchment paper and draw a 20cm circle as a guide.
    Beat the egg whites with an electric mixer until soft peaks form. Gradually add caster sugar, one tablespoon at a time, ensuring it dissolves completely. The mixture should be thick and glossy.
    Fold in cornflour, vinegar, and wattleseed gently. Spoon the mixture onto your prepared tray, spreading it to fit the circle.
    Bake for 1 hour, then turn off the oven and let the pavlova cool completely inside.
  2. Whip the cream:
    In a chilled bowl, whip the cream with icing sugar and vanilla extract until soft peaks form.
  3. Assemble the pavlova:
    Spread the whipped cream generously over the pavlova base. Top with finger lime pearls, native fruits, and edible flowers for a festive and uniquely Australian presentation.
