Classroom Cooking: Saltbush and Mountain Pepperberry Crackers

Australian bush tucker, also known simply as bush tucker or bushfood, refers to native Australian ingredients traditionally used by Indigenous Australians for food and medicinal purposes. These foods are sourced from the diverse flora and fauna found in Australia’s bushland and include plants, fruits, nuts, seeds, insects, and animals.

With over 5,000 species of native edible plants in Australia and this inspirational culture to learn from — it’s surprising how few of Australia’s natural superfoods are used in everyday kitchens.

Introducing bush food recipes into food-tech classrooms not only teaches students about cooking techniques but also introduces them to Indigenous Australian ingredients and culture. It’s a great way to incorporate learning about native Australian foods into the classroom curriculum. 

Try incorporating this simple native recipe in your food technology classroom!

Saltbush and Mountain Pepperberry Crackers 

You Will Need:

  • 2 cups plain flour
  • 3 tbsp olive oil (plus extra for on top)
  • 100 ml water
  • 1 tsp coarsely ground mountain pepperberry
  • 2 tsp ground dried saltbush (plus extra for sprinkling on top)
  • 1/4 tsp salt 

Step 1. Pre-heat the oven to 180°C. Line one large or two smaller baking trays with a silicone baking sheet or baking paper.
Step 2. Mix the flour, mountain pepperberry, saltbush and salt together in a bowl.
Step 3. Add the oil, then slowly add the water while mixing. You may need to slightly adjust the amount of water to make sure the dough is not too dry or too sticky.
Step 4. Roll the dough out as thinly as possible and place on the lined tray. Drizzle over some olive oil then spread it over the dough. Sprinkle with extra saltbush.
Step 5. Bake in the oven for 20 to 30 minutes or until nicely firm and browned.
Step 6. Leave to cool. Then break into shards and serve.
